Rinsed the grapes in a sink of water with two crushed campden tablets. Crushed the grapes through a sieve (which took ages). Then squeezed them through a muslin, To get exactly 2gallons of juice. Added 500g of unrefined cane sugar

Bought a Hydrometer so that I could measure the Specific gravity.
Added about another 200g of sugar to bring the specific gravity to 1.075.

White Wine Le Paddocks
Here are two white Wine recipes that I have discovered on the internet.
The Grapes taste great, like sweet gooseberries. So I am hoping for big things.
Recipe 1
Use only the ripe undamaged grapes, bad grapes make bad wine.
When every grape is squashed add a yeast-a Gervin Yeast is best.
Leave in the bucket for about 2 days then press the grapes to get the juice out.

Damson Wine
20 September 2009 - Visited my fave Damson tree over the weekend and picked 10 lbs of beautiful, sweet, medium sized Damsons. It was a fabulous year for them, last year this tree had only a few but this year there were thousands.
BTW I saved some in the freezer for soaking in Gin and Vodka - for a future post.

Elderberry Wine
Syphoned the wine into another demijon leaving the sediment behind and topped up with water.
Tasted the wine and it was good but still had a dry finish, I am hoping it will mellow over time.
Also added 1 tsp of fermentation stopper and 1 crushed campden tablet.

14 September 2009 - A few weeks ago, I was generously given some pears. They were fantastic eaters/dessert pears, medium sized yellow/gold in colour. We ate about half of them but the last ~6 lbs were starting to go overripe - so I got busy with the newest tool in my kitchen - a Moulinex Pro Juicer.

5 Sept 2009 - Made from leftover beet water from boiling beets for pickling. Here’s the method:

Blackberry/Sloe Wine
30 Aug 2009 - 3 pounds of blackberries and a half pound of sloes in a jelly bag and heated a large pan with about a half gallon of water to 90 deg C and let sit for several hours. When cool I poured the liquid, which was a deep dark colour into a primary fermenter.
