Elderflower Champagne

I am attempting to follow Hugh Fearnley-Whittingstall’s recipie

We picked the Elderflowers at midday. Apparently you are meant to pick them in the morning, as in the afternoon they tend to smell like Cat’s pee!

Tabatha and I struggled to find any big flowers on the tree, and she had to sit on my shoulders to get the good ones.

Hugh says to collect 24 – 30 flower heads, but they differ in size quite a bit from tree to tree.

I think we picked about 40 little ones.

We also made sure that the flower heads had just opened.

I snipped all the flowers off of the stalks, and followed his recipe to the letter.

I sterilised my fermentation bucket and rinsed it out. (not sure I rinsed it enough though)

I put the lid on and left it in the garage for a couple of days,
