Elderflower Champagne (4 June 09) photo above taken six days since start, flowers/citrus peel removed on 2 June. It’s been fermenting steadily and is nearly ready to bottle. However, not much sediment is evident yet, so I’ll probably wait until it starts to settle and begin clearing before bottling.
Note on 9 June 09 Bottled the “champagne” two nights ago while it was still fermenting into the twelve 2 L plastic soda bottles. Two days since and the bottles feel firm with pressure so the drink will be bubbly soon. The taste at bottling was nice - about the same as I’ve had the past few years, which is slightly sweet and citrussy with a pleasant level of Elderflowers. Measured SG = 1.03 which is between 1.5% - 2% alcohol at this stage.
