Elderflower Champagne

Bubbles forming; not frothing but fermentation has definitely started up.

It’s been four days so I removed the floating matter that I could catch. Not easy using a punch ladle through the 4” opening of the barrel but most of it has been removed. Put the newly re-valved top on and now I’m going to leave it to ferment and pressurise for a while.

SG 1042 which implies ~300g of sugar from the fruit which could be right, assuming the fermentation has only just really started.

Looked milky. Very sweet at the moment.
Smells of elderflowers and fruity orange. 
Tastes of elderflower and lemon but predominately of lychee!
