ElderFlower Champagne Batch 2

I also started a 2nd batch on Sunday. I found it hard to find fresh new Elderflowers.

I decided to follow Jason’s recipe this time. But I tweaked it a bit.

2 gallons of hot tap water 0.5 gallons of cold

1 kg of sugar

Grated zest and juice of 4 lemons
40 elderflower heads, with most of the stems trimmed off (harvested from stourbridge grove Allotment)
1/4 cup of white wine vinegar.

the pith on lemons is the bitter bit, So I did not put the whole peel into the mix.

I am also not adding any yeast and hoping that it will start off on its own.
