2 August 2009 - Finally got around to bottling some wine last night. There was 3 gallons of elderberry started last fall and also a gallon of parsnip from this spring both ready to bottle. I was hoping my plum wine from last fall would also be ready but it isn’t showing any signs of clearing, so I’ll wait on that one for a while longer. 

The elderberry is very dry and I’m not sure about it yet, it tastes fine but I think I might prefer it slightly sweeter. I bottled it anyway just to see how it goes. 

The parsnip is excellent, maybe my best effort yet. It’s ready to drink now, dry and with a strong but lovely taste of parsnips, which makes it seem more like whisky than a wine. 

Anyone up for a tasting to compare both of the above?
